No acting here, but pure dedication to the performance and presentation is what makes this meal worthy of an Oscar.
No special occasion either, but it sure felt like it. :)
The meal started with the best cut of meat you will find.
A nice sea-salt rub.
"J" then gave them a perfect grill on the stove top grill.
Beautiful carmelization.
This is part of the tedious process of making a homemade hollandaise sauce.
Whisking and whisking and whisking is involved. But, so worth it. Waaay better than the packaged mix.
Oh, just some fresh lump crab. This is the "Oscar" in tonight's meal.
The crab goes into the hollandaise sauce.
Some fresh asparagus joins the party.
Only the heads are used. We recommend keeping the stalks though. They make the perfect cream of asparagus soup.
The complete meal. A big 'ole baked potato with butter, sour cream, salt and pepper and Fillet of Oscar. The perfectly cooked fillet with the crab hollandaise sauce and asparagus spears on top.
Like I said: Worthy of an "Oscar". "J's" cooking performance and the presentation. The meal was rich and savory and hit the spot. What a treat.
My plate. Not much left!
For dessert, crepes layered with a cream and almond honey. It was light and refreshing. The perfect end to our perfect night. Who needs special occasions? :)
Until next time......A la cuisine!
