Brisket for Fat Tuesday

That's a beautiful piece of meat.  A meat worth celebrating Fat Tuesday with!

"J" stuffed the meat with a whole garlic clove.

The meat, after cooking for several hours.

Lots of fresh veggies and herbs.

After cooking several more hours, carrots get added.

How unbelievably rich does that look?


The base of this dinner will be a parsnip mash.


Cut like carrot slices.

Boiled.

Added to the food processor with plenty of spices and, most importantly, cream cheese. 

The brisket with the veggies displayed gorgeously.

We each got a hefty portion of meat, and a cute individual container of the parsnip mash.

So delish!

For dessert?  "J" took a stab at one of me and "A's" childhood dessert favorites.  Strawberry Jello Cake.  He definitely JAKed it up, by doing raspberry instead of strawberry.  As well, a fresh butter cream frosting (instead of the out of the container cool whip topping we are used to).  Plus, those fancy chocolate sticks.  Hello!

You cook a white cake, poke holes in it and pour the jello mixture in the holes.  Makes for not only a tasty cake, but beautiful as well.  It was REALLY good! 

What a great Fat Tuesday.  We hope all of your Lent "give-ups" are going well (as it's been a few weeks).  :)
