Gallbladder Attack......BUT, JAK is fighting back!

Strange title, I realize.  "A" has been battling her gallbladder for several year's, and the past few month's it's taken her over.  She's been such a trooper, eating all the fabulous yet high in fat meals we've been creating.  So "J", being the sweet caring husband he is, decided to cook a lean and healthy Monday meal this time round.  What's cool?  The meal, from appearance, doesn't seem healthy (hello, a hamburger)?


The first picture this week is of these gorgeous on the vine tomatoes.  Aren't the cute?!  "J" sliced them very thinly, which is a personal favorite of mine.  Add some salt and that's a meal in itself. 

For this week's feature, "J" made Buffalo burgers.  He added tomato paste and onions, along with other seasonings, to help bind and flavor.  Buffalo meat is very lean, so a very healthy burger alternative!

"A" made a cucumber, onion and apple salad.  The dressing was just a red wine vinegar and salt and pepper.  It was so delicious.  And, look at the cute little bowls she put each little serving in!

"A" used a fat free and gluten free pita pocket.  We each decorated our buns in our own unique way.  Me, with piling lots of mayonnaise, mustard and ketchup with onions, tomatoes and pickles.  "A" being healthy and going just for honey mustard and the veggies and "J" copying off me, but adding lettuce to the mix.

My burger.  Okay, with the mayonnaise it really isn't healthy.  But, doesn't that look divine?

Best part?  We enjoyed it all picnic-style!  The cucumber salads in their individual lid-topped dishes, a zip-lock bag of gluten free chips and our burgers wrapped in paper towels. 

This is the remainder of my burger.  Was too good not to finish, but I was stuffed!

For dessert: A fat free orange flavored angel food cake. 

"A", special for "J", made an orange glaze to go ontop  It was so delicious.  The cake alone was flavorful enough, but add that glaze and wooeee!
